[NY Times - Greek Lemon Potatoes] or as Swiss Meringue named it "Satan's Recipe for Burnt Potatoes and Ruined Sheet Pans."
Ingredients.
- 1/2 cup chicken broth or water
- 1/2 cup olive oil
- 1/2 cup freshly squeezed lemon juice (3-4 lemons)
- 1 tablespoon (big one) kosher salt
- 3 pounds large Yukon Gold potatoes (about 6)
- 1 tablespoon dried oregano (optional)
- Flaky salt and black pepper, for serving
Preparation
- Heat oven to 450
- Combine broth, oil, juice, and salt. Toss potatoes.
- Arrange potatoes on an even layer cut-sides down.
- Sprinkle oregano over potatoes.
Hour Long Roast
- flip potatoes half way through.
- Roast until fork-tender, dark brown and crispy on top.
Finish
- Sprinkle with flaky salt and black pepper as desired.
